Perhaps the city's most rarefied dining establishment, Triton is the place to go for a luxury seafood experience and for an evening out with the New Russian rich. The glass floor in the foyer reveals an aquarium beneath your feet, and a waterfall cascades tastefully down the main hall. Even the fish swimming in the transparent toilet tanks manage to look sophisticated instead of kitschy. The restaurant caters to the evolving New Russians, satisfying their need for extravagance but in a hushed atmosphere with subtle service -- as opposed to the fawning servers and gaudy floor shows popular elsewhere. A harpist accompanies dinner service. Try one of the several kinds of caviar -- they're pricy, but so is everything in this restaurant -- and the lobster, surprisingly succulent given that it's shipped in. The foie gras is the finest choice if you don't want fish. Coffee is served with much ceremony. Be prepared for everyone from the maitre d' to the coat-check person to study your attire; you're expected to study their carefully designed, nautically inspired uniforms, too.
