Across the street from the Seattle Art Museum's new wing, this beautiful, minimalist space is a don't-miss spot on any foodie's visit to Seattle. Chef Ethan Stowell has assembled a kitchen crew with impeccable credentials, and it shows on the highly creative menu. The quality of the ingredients is incomparable and the presentation is gorgeous. Because the menu changes with the seasons and relies on whatever ingredients are freshest that day, you never know what might be available. Perhaps celery-root soup with seared scallops, Dungeness crab salad with avocado purée and basil oil, roasted squab with parsnip and green apple puree, or grilled venison with sunchoke puree, red chard, and black currants. For dessert, be sure to try the creamy chocolate-espresso pot de crème, if it's on the menu. A light menu is also offered in the bar from 5 to 7pm and from 10pm to midnight.
