If this is the nerve center of Salt Cay, then its ebullient owner, Porter Williams, is its commander. The Island Thyme is more than just a good place to eat -- it's the local bank, the Internet access center, and party central. Where else can you sip a cool Cuba Libre while cheering on a hermit crab race? Where else can you dine out on seared rare sirloin and grilled lobster, smoke a fine Cuban cigar, and then walk home in your bare feet? Porter Williams brings together the widely disparate passions of his life in this delightful restaurant, and visitors are the better for it. Island Thyme is open for breakfast, lunch, and dinner and has a lively bar scene -- ask about the Wolf shooter, but sign over everything you own to a trusted family member before imbibing. At night, sample such delicacies as coconut shrimp, almond-crusted snapper, duck breast, and even beef Wellington. An outdoor wok station is planned for winter 2008. See you at Friday Pizza Night!
