Raw herring is a Dutch specialty, and there are dozens of haringhuis stands in town, but this one is regarded as the best. Located on a bridge near Centraal Station overlooking the Singel canal, the stall is something of a local institution and long lines form here come lunchtime. It’s a great spot to sample raw herring served in a bread roll with pickles and sweet onions; tip your head back and try and eat the fish whole for a quintessential Amsterdam experience.
